Can someone guide me on coconut milk? When I use it in curries, it often separates. And for how long can it b kept? In fridge also it starts becoming sour after 24 hours or so.

Reason is simple that you are adding salt when flame is on. In any dish you put coconut milk please add coconut milk at the end. Let it warm for 2-3 minutes only and not cook for long as it changes coconut milk properties. then swith off the gas and then add salt. Other spices are ok to be added before.

नारियल दुध का इस्तेमाल गैस बंद करके करें।

नारियल के दुध को पकाना नहीं चाहिए।

फ़्रीज़ में रखने के लिए हर 3 घंटे पर दुध में एक बर्फ़ का टुकड़ा डालें। ऐसा करने दुध खट्टा नहीं होगा।

नारियल के दुध से नमकीन या मीठा कुछ भी बना सकते हैं पर उसको आँच बंद करके ही डालें।

Hi

Use coconut milk with slow and regular stirring.  It prevents Separation.  The separation happens because in high heat the oils and protein in coconut milk starts to separate. To avoid this add coconut milk in low heat mode and stir regularly. 

You can refrigerate coconut milk 2-3 days, anyhow freshly made coconut milk has more beneficial for health.

Hello, once you open the can of coconut milk ideally it has to be used immediately after you have opened it. You need to add coconut milk at the very end so that it doesnt separate, and you should not boil it just keep it on low flame till it is mixed with your vegetable and then you can switch off the flame after 3 minutes. Try to use the can at one go if not you can use it for any other thing within 6-7 hours after the can is opened.

Hi are you adding salt with the gas on and cooking coconut milk for a long time on gas. And also look into your process of making and storing. When we start making coconut milk, the first coconut milk which is very thick  should be kept separate and the second coconut milk lot which is thin, Are you mixing it all together and storing. Store them separate and they will last more than 24 hour.

I would like to understand how you make your coconut milk? I do coconut milk at home very regularly and in bulk for my other profession. The trick to ensuring that the coconut milk stays for 2 to 3 days or even sometimes 4 to 5 days., is to ensure that let’s say the grated coconut is first fresh, kept in a steel or glass container only. secondly before you make the coconut milk ensure that it is soaked in hot water ( not boiling) for about five minutes before you put that to the Mixie to grind for 3-4 mins. I had a complaint from someone I am guiding, who was trying to go vegan to heal from pcod. so what she was trying to do is take the grated coconut directly from the fridge and try to get the milk extracted from it , it is an absolutely wrong way to extract. First point such milk extracted will release its oils and also spoil very quickly. The milk extracted with this process that I mentioned above can tolerate even boiling.  Although I do not boil any coconut milk, even in case you do, it will not split. It’s always better that you cook jaggery or salt-based food in water and use coconut milk just as a taste enhancer or a garnish/ a thickening agent/whitener. In the process that I mentioned even in case you are coconut milk is boiled with jaggery also it will not split. So always remember that even if your coconut is grated the previous day or even a couple of days before, you will have to put it in hot water for about 5 to 10 minutes for it to come back to room temperature and use the same water to extract the milk. Remember to always store coconut milk in a glass bottle in the back of the fridge.

It is always advisable not to preserve it and even in the God's Own Country ( Kerala ) there is no culture to preserve it and when you preserve it taste changes and hence it is best to extract fresh coconut milk and use then and there....
