I want to make rice noodles in coconut broth. Any recipes??

Hi! You could try this recipe of veggies and rice noodles in coconut broth:

  1. Cook the rice noodles according to packet instructions.
  2. Steam the potatoes and mash with a potato masher. Set aside.
  3. Pre-heat a pan and dry roast peppercorns, cinnamon, and cloves for a few seconds, or until the spices are fragrant. Add the onion and a little salt, and saute for 3 to 4 minutes, or until softened and golden brown.
  4. Add the curry leaves, chiles, and ginger, and cook for a little while. Now add salt, and freshly ground black pepper as well as the cauliflower and broccoli florets. Then add enough of the boiling water to cover the veggies. Bring the mixture to a boil, and cook until the florets are just tender. Add the mashed potatoes and other veggies of choice - green beans, peas, and 1 cup boiling water, and stir until the mashed potato absorb all of the water, and the mixture is thick.
  5. Once the mixture comes to a boil, reduce the heat to simmer, and add the coconut milk and garam masala. Add to taste (if required) salt, and freshly ground black pepper.
  6. To serve the dish, simply spoon over the vegetable stew over the cooked noodles and garnish with the chopped cilantro.

You can also have rice noodles with khao suey, korma which is kerala cuisine or with Thai curry. All are coconut milk based.

I don't know if you want sweet or savoury version.

For sweet version,  Cook the rice noodles as per packet instructions. Make the coconut milk. Mix in jaggery powder and elaichi. 

For savoury, steam veggies like potato, peas, beans and carots. Take a pan and splutter mustard seeds. Add green chilies and currly leaves. Then add ginger pieces. Add the steamed veggies and coconut milk and salt and let it warm. This is called as 'ishtu' or coconut milk stew.

Both are served with the cooked rice noodles.

You can also have rice noodles with khao suey which is coconut milk based or with korma, kerala cuisine or with Thai curry.
