
Green Rice
Wash and soak the whole brown rice for about 8-10 hours in 2 ½ cups water. Cook the rice. Make a chutney in the grinder with all the other ingredients except the onions. Brown the onions without oil. Add the chutney and roast. Mix it with the cooked rice. Garnish with roasted garlic cloves and chopped dry red chillies. Serve hot. Fragrant Brown Rice
Drain the water from soaked rice. In a pan mix saffron strings and sea salt in 2 cups of water. Add soaked rice to the pan and cover the pan. Cook rice on medium heat till the rice is fluffy. Vegetable Pulao
Soak rice in water for half an hour before cooking. Wash & drain the rice. Blend mint, coriander, ginger, garlic, garam masala, chillies & half the onion to a fine paste. In a rice cooker or in a pan add the paste, bay leaves and let it cook for a couple of minutes. Add the cloves, cardamom, cinnamon, the vegetables & cook for a couple of more minutes. Add rice & salt. Mix well so that the rice is coated with the spices. Add the water & cover the lid. In the same pan ‘fry' the onions with a little water till it turns translucent & brown. Whole Rice
Wash the rice and soak in 2 cups water for 1 to 2 hours. The soaking is not necessary but helps to reduce the cooking time and the rice will be nice and fluffy. Now cook the rice in a close thick bottom pot till the water evaporates. Serve hot Tip: If you turn off the heat before the rice is cooked, the rice will remain hard. Make sure the rice is cooked according to your preference before turning down the heat. You may then add a bit of water at the time of reheating. Vegetable Biryani
For the Chutney Grind the chutney ingredients to make a paste. For the Rice Wash and cook the rice with whole garam masala and salt. Steam the vegetables. Make a sauce from the tomatoes and ground coconut. When the rice is cooked, mix in the tomato-coconut paste. In a pan sauté some cumin seeds, add red chilli powder, green chutney and the steamed vegetables and mix well.
