Tomato Mint Soup
In a pan, add jeera seeds and let them splutter/pop. Add chopped garlic and sauté till light brown. Add the chopped red/green chilies and sauté. Add roughly chopped tomatoes and sauté. Add vegetable stock or dal water and bring to a boil. Add salt. Simmer until tomatoes are cooked. Check for taste. Add seasoning, if needed. Garnish with roasted seeds and chopped mint. Serve hot. Carrot & Ginger Soup
Saute the onions in a hot pan for about 5 minutes until transparent. If they stick, add a little water. Add the carrots, ginger, and crushed coriander seeds and stir on medium heat for 5 minutes. Add the stock or water and bring to a boil. Cover and cook until the carrots are tender. Purée the soup in a blender and then strain through a sieve. Reheat the soup and season with salt and pepper. Mulligatawny is a soup which originated from South Indian cuisine. It's almost forgotten that it was known as the national soup of India. The name originates from the Tamil words miḷagu (pepper), and taṇṇi (water). Due to its popularity in England during British India, it was one of the few items of India that found common mention in the literature of the period. There are many versions of this recipe. Most of the recipes use meat rice and lentils to make it a thick broth. Let's make a millet based dairy and meat free version to enjoy a flavorful soup.

Oilfree South Indian tomato rasam (Karnataka style)
Simple, easy & quick recipe to make delicious rasam at home.Rasam means “juice” in Tamil and Telugu. In Kannada, it's called “Saaru”. It can mean any juice, but in South Indian cuisine, rasam is a thin soup made with tamarind, tomatoes and other spices like mustard, cumin ,pepper. This rasam powder and rasam are oil-free. Rasam is typically supposed to be a watery spicy and tangy dish and you will not see the consistency of a Sambar that is typically served with Idli. This is like a tasty vegetable broth.
