Vegetable oils are highly fragmented and it contains a high amount of fatty acids. By implementing smart substitutes to oils we are on our way to great serving thats delicious and low fat. Here's a recipe that implements an oil replacement which creates a healthy and delicious sabzi. Read on to know more:
You will need:
Carrots chopped: 2
Peas: ½ cup
green beans chopped - 1 cup
For the gravy:
Tomatoes: 2 (roughly chopped)
Coconut kernel chopped: 1 cup (replacement for oil)
Green chilli-1
curry leaves- a handful
Rock salt to taste
Soak the vegetables in some water for about 1 to 2 hours. Then take a pot, add some water to it along with the chopped veggies. Cook for about 8 - 10 mins. While the vegetables are cooking you can prepare your gravy.
For the gravy:
Add the tomatoes, coconut kernel, green chilli, some curry leaves and rock salt to taste. Blend all of this together and add this mixture to the veggies that's been cooking. Cook for 5 minutes and off the flame. Let the gravy cook in the pot with the steam. Once done, garnish with lots of coriander and your healthy sabzi is ready to serve.
