Potato, French Bean & Walnut Salad with Mayonnaise

Ingredients
  • equal quantities of potatoes and french beans
  • some walnuts
  • finely chopped celery and spring onions
  • cashew mayonnaise, as desired
  • lettuce
  • parsley
Method
  • Steam the potatoes. Chop into small cubes.
  • Steam the french beans and cut long.
  • Add finely chopped celery, spring onions and walnuts.
  • Stir in the cashewmayonnaise and mix well.
  • Serve on a bed of lettuce and dress with parsley.
