
Sliced Cucumber Peanuts Salad

Cucumbers are extremely high on water content. Add to your daily intake to keep yourself hydrated in scorching summer months. But how much kheera can one eat each day? So here is our tip: Adding a different cut to this veggie can completely change it's look and feel. Add it with a different nut or nut paste, and you have a different tasting salad each time.
Here’s a recipe for simple easy to do delightful raw salad - cucumbers paired with the crunchy peanuts. No more of the same boring cucumber!
Ingredients
- Cucumbers: 2 large (check & make sure it’s not bitter)
- Roasted peanuts: 1/2 cup or a handful (roughly pounded into a coarse mix)
- Mint Leaves: 6-7 torn roughly
- Chilli Flakes: For taste
- Lemon: Juice of ½
- Rock salt: to taste
Method
- Wash your cucumbers well. Cut ends and peel the cucumbers.
- Cut the cucumber simply in half-moon shape.
- Once your cucumbers are sliced, keep in the fridge to cool down.
- Prepare the salad dressing in a mixing bowl. Add the other ingredients i.e. peanuts, lemon juice, mint leaves, salt, and chili flakes.
- Keep the bowl of salad dressing also in the fridge.
- Once chilled, add the sliced cucumbers in a nice looking bowl and sprinkle the rest of the dressing around and on top of the cucumbers.
