Beetroot Onion Rings Salad

This recipe may work to be a saviour for mothers who struggle to get some beetroot down their little ones’ throat. This humble vegetable has a rich nutritional profile that provides a plethora of health benefits. Also known as blood turnips, beets are an excellent source of fiber as well. Its nature’s own dietary supplement!

Munch on this beetroot and onion rings salad with contrast of colours and vibrant flavours, its a total delight! Enjoyed as a lunch in the afternoon, it is sure to reboot your day and make you feel positively charged!

  • Beetroots: 4 medium sized (sliced beets, drained)
  • Onion: 1 medium-sized (sliced thinly into rings)
  • For Dressing
    • Jaggery powder: 1 tsp

    • Lemon juice: 1 tsp

    • Rock salt: to taste

    • Mustard powder: ⅛ tsp

    • Paprika: ⅛ tsp

    • Celery seeds: ⅛ tsp (optional)

    • Dash of pepper

  • Mix together beets and onion rings in a shallow bowl.
  • Combine all dressing ingredients.
  • Pour over beets and onion rings.
  • Cover and refrigerate overnight.
  • While serving, sprinkle pepper and salt for added flavour.
