
Chickpea Salad With Greek Dressing - loaded with fibre & proteins

Easy Greek Chickpea Salad is a mouthwatering healthy salad that is packed full of amazing flavors and textures! Chickpeas come together with fresh vegetables, olives, and a simple dressing for the best and easiest chickpea salad ever!
It has become quite a staple for us - equally relished for a weekend family lunch or packed for office.
Ingredients
- Chickpeas: 2 cups (boiled)
- Cucumber: 1 cup (diced with skin on)
- Tomatoes: 4 (diced)
- Red Capsicum: 1 (diced)
- Yellow capsicum: 1 (diced)
- Red onion: 1 small (thinly sliced)
- Olives: 1 cup (pitted)
For the dressing:
- Fresh herbs (Indian basil or parsley or coriander): 1 cup
- Lemon juice: 3 tsp (or to taste)
- Dried oregano: 1 tsp
- Rock salt: to taste
- Freshly ground pepper: to taste
- Cold pressed olive oil: 1-2 tsp (optional)
- Roasted sesame seeds: 2-3 tsp (optional)
Method
- Wash chickpeas well 2-3 times in water.
- Soak overnight (or for 6-8 hours) and cook with a little salt.
- Remove seeds while chopping tomatoes. This helps as the tomatoes leave less water.
- In a large serving bowl, combine the cucumber, tomatoes, capsicum, olives, onion, chickpeas, and herbs.
- In a small bowl, whisk together the olive oil, lemon juice, and oregano.
- Pour over the salad and mix well.
- Cover and store in the refrigerator until ready to eat.
