Raw vegetable summer salad with the goodness of pumpkin seeds!

Ingredients

Seasonal summer vegetables

Cucumber - 1

Kakdi -3

Spinach - 50 gm

Pui Saag - 50gm

Tomato - 4 small cherry tomatoes for garnish and 2 medium sized for dressing

Coconut - 50 gm

Coriander -3-4 stands

Mint - 1 stand

Pumpkin seed - 1 handful

 

Method

Fine chop all vegetables including the green leafy saag. Grind coconut, 2 tomatoes, coriander and mint in a blender. Add it to all the chopped vegetables. Add Pumpkin seeds and the cherry tomatoes for garnish.
