Sweet Potato with Herb Cashew Cream - quick, kid-friendly salad!

Dairy free, creamy, salad with the goodness of steamed sweet potatoes. Can be served Kid friendly without chilli.

  • Sweet potato: 400 gms (scrubbed clean and sliced thin)
  • Cashews: ¾ cup (soaked for 4 hours)
  • Garlic: 2 cloves
  • Rock Salt: to taste
  • Lime: 1 no
  • Basil: 2-3 tablespoons (chopped)
  • Chilli flakes: As required
  • Slice the scrubbed sweet potatoes into thin slices. Preferably with the skin if organic. (If you think they are not clean enough you may peel them.)
  • Rub some salt on the sweet potato slices and steam in a steamer for about 8-10 minutes, depending on how thin the slices are. They cook very soft and quickly so please check for doneness around 8 minutes.

  • Blend the cashews, salt, garlic and juice of one lime with just enough water to get a smooth creamy texture.
  • Add chopped basil leaves to the cashew cream.
  • Mix the cashew cream to the steamed sweet potatoes slices. Check seasoning.
  • Serve warm garnished with a sprig of basil.

Wellcure Tip: The cashew cream may be absorbed, to not make the dish look lumpy so feel free to add some water/ coconut milk to the cashew cream to thin it down.
