What do you do when you want to eat ice-cream but you don’t want the dairy products and the artificial colours and flavors and chemicals that they are made of?? Make yourself a wonderful sugar-free, dairy free, natural, homemade kulfi with simple ingredients.
Thick coconut milk: ½ cup(first extract of about half a coconut)
Nut powder: 3 tbsp (almond, pista, cashew mixed and blended into a powder)
Dates: 6-8 nos(seeded)
Cardamom powder: ¼ tsp
Saffron: Few strands
Soak dates overnight in just enough water/in the second extract of coconut milk.
Powder mixed nuts. Don’t worry about getting a very fine powder.
Make a paste of the soaked dates without the liquid. Add thick coconut milk if you need.
Add nut powder and cardamom powder.
Mix in the saffron strands.
Freeze for two hours. Whip together.
Freeze for two hours and whip again. This helps prevent ice formation.
Scoop or cut and serve garnished with crushed nuts and saffron.
Can be set in clay pots and served as the popular matka kulfi.
Food group: nut milks and nuts.
Can be served as a traditional dessert.
