
Dairy- Free Mango Softy

What do you do when you want to eat ice-cream but you don’t want the dairy products and artificial colours and flavors and chemicals that they are made of?? Make yourself a wonderful sugar free, dairy-free, natural, homemade mango ice cream with simple ingredients. Make sure you use the bright coloured and sweetest mangoes you can lay your hands on. You can’t go wrong with this one! And just four ingredients.
Ingredients
- Mangoes: 2 cups (cut into cubes and frozen for 6 hrs)
- Cashew: 1/2 cup (raw cashew powdered fine)
- Dates: 12-15
- Coconut milk: 1cup (first extract)
Method
- Place the coconut milk in the fridge in the coldest part of the fridge undisturbed.
- After a couple of hours, the water will settle and the cream will float on top. Separate the cream to a separate bowl.
- In a mixie make a pulp of the dates, add the cashew powder and blend further, add the coconut cream and blend.
- Add the frozen mangoes to the blender jar and continue blending until you have a smooth creamy mango softy.
- It can be served as a softy right away, else transfer to a container and freeze for 6 hours.
- Return to the blender jar and blend again and return to the freezer for 2 hours.
- Scoop and serve. Or freeze in kulfi moulds for about 6 hours.
Wellcure Tip: The sweeter the mangoes the lesser the dates you would need. If you don’t like it too sweet or for people avoiding extra sweeteners, you can completely skip the dates.
Eating guide
- Food group: Fruits.
- Ideally, fruits and nuts are not supposed to be mixed. However, once in a while or for variation you could eat as a treat.

Hi Ranjitha. As a food group, fruits must be eaten all by themselves. This is so because fruits digest very quickly. When mixed with other food groups, they have to stay in the stomach for longer & get exposed to more digestive juices. This causes them to putrefy & becomes a waste.
