Zucchini Salad – add the goodness of green veggies to your diet!

Zucchini is generally used in combination with other vegetables for salads or stir fry vegetables, but this interesting and quick salad uses zucchini by itself. A basic, easy-to-do salad that works as a wonderful summer coolant.

Ingredients
  • Zucchini – 1 (Sliced)
  • Lemon Juice – 1
  • White pepper – pinch
  • Coriander – 4 tbsp (finely chopped)
Method
  • Slice the zucchini into pieces of medium thickness and steam it for 3-5 minutes.
  • Arrange the sliced zucchini in a bowl.
  • Drizzle lemon juice, add white pepper and sprinkle freshly chopped coriander on top and serve.

Eating guide

  • Food group: vegetables
  • You can have it with your cooked meals or even as a quick bite between meals.
  • Steaming or light cooking the veggies ensure you are able to retain the enzymes and the nourishment - making it easier for the body to complete its nutritional profile intake.
