Spinach, Tomato and Fenugreek Leaf Salad – quick way to add greens to your intake!

Wondering how to increase your family’s intake of green-leafy vegetables! This recipe is a great way to add both spinach and fenugreek leaves in one dish. The addition of peanuts gives a whole new dimension to your salad.

Ingredients
  • Tomato - 1 (chopped)
  • Fenugreek Leaves -¼ cup (chopped, if you can’t find them substitute more spinach or lettuce)
  • Spinach Leaves - ½ cup
  • Mustard Seeds - ¼ tsp
  • Cumin seeds- ¼ tsp
  • Curry Leaves- 4-5
  • Asafoetida- A pinch
  • Rock Salt- As per taste
  • Jaggery powder - As per taste
  • Peanut Powder - 2 tsp (roasted)
  • Coriander leaves - a handful

 

Method
  • Fine chop the tomatoes, spinach and fenugreek leaves.
  • Mix them together.
  • In a pan, dry roast the mustard seeds. When they pop add the cumin seeds, curry leaves and asafoetida. Add this spice mix to the mixture of tomatoes, spinach and fenugreek.
  • Add salt, jaggery and the peanut powder.
  • Garnish with coriander leaves and serve.
