
Creamy Veggies & Sprouts Salad – replace your fried snacks!

A mouth-watering salad which can easily replace any of the fried chaat snacks. A complete balanced meal in itself providing a range of nutrients in one bowl. Great way to introduce salads to kids.
Ingredients
- Potato - 1 (steamed)
- Sweet potato- 1 (steamed)
- Cucumber - 1 (chopped )
- Tomato - 1 (Chopped )
- Moong dal - 1 cup (Sprouted)
- Green chilli - 1 (Chopped)
- Coriander leaves- 3 tbsp (Chopped )
- Lime juice - 2 tbsp
- Rock salt & black pepper – as per taste
- Cashew Cream - 2 tbsp (100 gms soaked cashew made into thick paste)(optional)
Method
- Steam the potato and sweet potato.
- Cut the potato, sweet potato into thick pieces.
- Scoop them from inside.
- Fine chop the cucumber, tomatoes and green chilli.
- Now in a bowl, put sprouts, green chilli and inner part of the scooped potato, sweet potato, cucumber and tomato.
- Add the lime juice, salt, black pepper and cashew cream (optional).
- Mix well and put this stuffing into scooped potato and sweet potato.
- Garnish with coriander leaves and serve.
