Yummy raw cabbage rolls that kids love for school snacks, after school snacks or like we prefer at home for a family raw dinner. Kids love it if I serve them like panipuri as they finish roll after roll except that roadside Panipuris are unhealthy and this is an absolutely healthy snack.
Roasted and crushed peanuts
Prepare the mint chutney by grinding mint lemon coriander salt garlic and chilli (Optional)
Soak the cabbage layers in hot water until all the chopping and grinding is done.
Roast peanuts, cool them and crush them coarsely.
Add all the top ingredients, peanuts and mint chutney and Roll the cabbage leaves.
Tie the rolls optionally with spring onions.
