This is iyengar sambar powder recipe. It is a flavourful blend of lentils and Indian spices. It is the main ingredient used to bring flavours to a lentil rich gravy called Sambar. It is thicker than a traditional rasam because of the use of channa dal in the powder. Sambar is typically relished with rice/dosa/idly.

Ingredients

  • Red chilli: 5 cups
  • Coriander seeds: 3 cups
  • Toor dal: 1 cup
  • Channa dal: 1 cup
  • Mustard seeds: 1/4 cup
  • Methi seeds: 1/4 cup
  • Turmeric: 10 sticks

Method

(Raw and powdered)

  • Sun dry all ingredients for 1/2 day or warm them in an iron vessel.
  • Grind them to a fine powder.

Tip: Needs additional boiling as the powder is raw when sambar is prepared
