Potato Salad - get the goodness of veggies!

Potatoes are often associated with and avoided for their high carbohydrate value. But, then potatoes are rich in fiber, potassium and Vitamins. Make this simple and tasty salad at home and relish it at any time during the day.

Ingredients
  • Potatoes - 4 (steamed )
  • Coriander leaves - 2 tbsp (chopped)
  • Peas- ½ cup (steamed)
  • Green chilli - 1 (chopped)
  • Mustard powder - ½ tbsp
  • Garlic powder - to sprinkle (roasted)
  • Chilli flakes - to sprinkle
  • Rock salt - to taste
  • Lime juice - juice of half lemon (or more)
Method
  • Cut the steamed potatoes into even-sized cubes. Can roast for a minute on a tawa if desired, or use as is.
  • Mix all the other ingredients with the potato cubes in a mixing bowl.
  • Sprinkle garlic powderover the salad and serve.

  • This salad can be consumed at room temperature or even cold.
  • It works as a filling mid-day or evening snack as well.
  • Steaming vegetables instead of cooking them at high temperatures helps retain moisture and nutrition.
