Palak Patra - raw, oil-free!

Patra/patrode/ Aluvadi is a very common dish in western India made by smearing a spice paste of rice and lentils on taro leaves or arbi ke patte and steamed. It is then tossed in tempering with oil.

Consuming greens in raw form is always a challenge. Now we can have an excellent raw patra, equally delectable made of raw spinach leaves. It’s unbelievably tasty and succulent.

Ingredients
  • Spinach Leaves: 8-10
  • Raw peanuts: ½ cup
  • Green chilli: 1 nos
  • Red chilli powder: ½ tsp
  • Ginger: 1-inch piece
  • Lime juice: 1 tablespoon
  • Rock salt: to taste
Method
  • Clean spinach leaves and gently wipe them dry.
  • Choose big sized leaves.

  • Cut the midrib if they are too tough.
  • In a blender place all the other ingredients and blend to a thick paste adding little water. Taste the paste and adjust the seasonings.
  • Place the leaves together, overlapping in a way to form a sheet-like layer without gaps.

  • Smear the peanut paste on the spinach leaves layer. And cover it with another layer of spinach leaves.

  • Repeat smearing the peanut paste on the spinach layer and roll the spinach sheets together as tightly as possible to get a neat roll.

  • Use a sharp knife to cut the roll into slices.

​​​​​​​

  • Serve as starters or as a salad.

Wellcure Tip:

  • Tender, but big leaves work best for this recipe.
  • Removing the midrib of the leaf makes it easier to roll.

    ​​​​​​​Eating guide:

  • Food group: Greens and legumes
  • Peanuts technically belong to the legume family. However, nutritionally as well as for culinary purpose they are considered a nut! Like other nuts, peanuts are a good source of fibre and nutrition.
  • They could be combined with other food groups and can be consumed along with cooked meals as well!
  • Raw greens are a great source of nutrients.
