Creamy Veggies & Sprouts cups - add live foods to your plate!

Struggling to add sprouts to your family’s diet. Here’s a creative way of doing so. Create cups of steamed veggies and stuff them with creamy sprouts filling. Looks good! Tastes even better!

Ingredients
  • Potato - 1 (steamed)
  • Sweet potato- 1 (steamed)
  • Cucumber - 1 (Peeled )
  • Tomato - 1 (Chopped )
  • Moong dal - 1 cup (sprouted)
  • Pomegranate- 1 /2 cup
  • Green chilli - 1 (chopped)
  • Coriander leaves- 3 tbsp (Chopped )
  • Lime juice - 2 tbsp
  • Cashew Cream - 2 tbsp (100 gms soaked cashew made into think paste)
Method
  • Steam potato & sweet potato - do not overcook.
  • Cut the veggies – steamed potato, steamed sweet potato, cucumber and tomato into thick pieces.
  • Scoop them from inside.
  • Now in a bowl, put sprouts, pomegranate, green chilli, cashew cream and inner part of the scoped potato, sweet potato, cucumber and tomato.
  • Add the lime juice and mix well.
  • Garnish it with Coriander leaves and serve.

  • Steaming vegetables retains the nutrition as well as digestive enzymes
