Replace refined flour noodles with these fresh raw crunchy zucchini noodles. Mixed with the spicy almond dressing it is extremely delicious.
Yellow zucchini: 1 cup (grated/peeled into juliennes)
Green Zucchini: 1 cup (grated/peeled into juliennes)
Carrot: ½ cup (grated/peeled into juliennes)
Garlic: 4 cloves
Kashmiri chili: 1 no
Tomatoes: ¼ cup
Ginger: 1 inch
Chilli flakes: ½ tsp
Lime juice: 1 tbsp
Rock salt: to taste
Jaggery: ½ tsp (optional)
Use a spiralizer or a julienne peeler to cut zucchini into long strings or noodle-like.
Blend all dressing ingredients into a coarse paste without water.
Mix dressing to the zucchini noodles just before eating/ serving.
