
No Dairy Mango Ice Cream - Your Kids Will Ask For More!

This one is another delightful way to answer the constant demand by our kids ‘Mummy, I want Ice cream’. The market bought versions have so many synthetic stabilizers, emulsifiers, preservatives and additives, so here is a healthful way to eat ice creams again! Actual preperation time of this dessert is about 30-45 mins. The 2-3 hours is for freezing. The prep of this recipe is easy, if you have extracted your coconut milk in advance.
Ingredients
- Coconut milk: 2 cups.
- Ripe Mango pulp: 2 cups
- Honey: 2-3 spoons
- Cherries: 2-3
- Anaar (fresh pomegranate seeds): ½ cup
Method
- Extract home made coconut milk.Read our post on how to extract home made coconut milk here
- Blend the coconut milk and mango pulp.Mix well in mixie.
- Add some honey if needed.
- Set in a freezer and allow it to freeze.
- Once frozen, take out and blend again.
- Add a layer of cherries and anaar as toppings.
- Freeze again.
Delicious mango ice-cream is ready to eat. Do not forget to eat this fruit based dessert before a meal (not after)!
Wellcure easy-to-make tip: Split this activity over 2 days. First extract the coconut milk. Don’t add too much water. Put it in fridge to set.
Day 2: Blend with Mango and freeze.
By evening, take out blend and freeze again. Ready to enjoy in mornings.
