Thai Cucumber & Tomato Salad - quick-to-do raw salad!

  • ½ white onion
  • 1 bunch of fresh parsley
  • 4 tomatoes
  • 3 cucumbers
  • 2 spring onions or shallots
  • ½ bunch of mint leaves
  • kaffir lime leaves


  • juice of 1 lemon
  • salt
  • black pepper
  • Chop all the ingredients fine and mix well.
  • Prepare the dressing with salt to your taste, and pour it over the salad.
