
Versatile Coconut Mustard Dressing - add nutrition & zing to your salads!

Coconut is one of our favorite nut to add variety, taste and health onto our plates. Grate it on salads, churn it in a mixie and add to veggies or soups. Or simply make some interesting chutneys and dips and add the oomph to salads.
Here is a quick-to-do coconut mustard chutney / dressing.
Ingredients
- Fresh Coconut: 1
- Green Chillies: 3-4
- Mustard seeds: 2 tsp
- Lemon and rock salt: as per taste
Method
- Break the outer shell of the coconut and extract the inner white part.
- Cut coconut into small pieces.
- Cut chillies into halves.
- Mix coconut, chillies and add the mustard seeds and grind the mixture into a fine paste.
- Add lemon juice and salt as per the taste needs.
- Coconut mustard dressing is ready to be used in salads.
Eating guide
- Food group: Nuts
- Goes with any food group (except fruits). Can be easily consumed with meals.
- Nuts are a natural source of oils, this is how nature meant us to get our oils and fats.
- Ditch the refined oil, add nuts and nut-based chutneys to meals for kids and adults alike.

I use the traditional grater,the manual one which is quite easy ..I have also heard storing the coconut with the shell in the freezer overnight will help in getting the coconut out of the shell very easily

Extracting coconut use to be a struggle for me. Recently I learnt a trick that has made life simpler! I put the coconut along with the hard outer shell immersed in water overnight. In the morning the coconut leaves the shell. A few knocks on the hard shell does the trick. You may want to try!

In South India, this is used as a gravy base to add flavour to dishes which use bland veggies like gourds.

There is a reason why nature has packed it in a shell so we don't overeat the deliciousness. Can be done easily with a sharp knife

This recipe sounds very simple, but extracting the coconut is the most difficult task. Is there any way to simplify that?
