
Creamy Palak Soup - incorporate greens in your diet

Green leafy vegetables like palak are a natural source of essential minerals and vitamins. They also rich in fibre and help curb our craving for salt. Therefore a must add to your diet. Palak can be had in salads, curries, snack etc. Here a quick and simple recipe to make creamy palak soup.
Ingredients
- Palak (spinach): 2 bunches
- Cashew paste: ½ cup
- Tomatoes: ¼ cup (chopped)
- Rock salt: as per taste
- Black pepper: as per taste
- Water: as required
Method
- Wash the spinach thoroughly and strain the excess water. Chop roughly.
- Steam the chopped tomatoes and palak and puree them in a blender.
- Put the tomato-palak puree on flame and give it a boil. Do not overcook.
- Add water to get the desired consistency.
- Add the cashew paste.
- Add salt & pepper as per taste.
