What’s more, it’s a raw soup.
Ripe tomatoes: 2 cups (chopped)
Garlic: 2 cloves
Green chilli: ½-1
Rock salt: to taste
Coconut milk: 1 cup
Coriander leaves: 1 tbsp (finely chopped)
Blend chopped tomatoes, garlic, green chilli.
Pass it through a soup strainer.
Mix coconut milk and salt to the tomato puree
Serve chilled, garnished with coriander leaves.
Food group: Vegetables & Nuts
Can be eaten before / along with cooked meals. Best served with a salad for a light lunch.
Can be used as a welcome drink in summertime parties.
