Red Rice Tender Coconut Dosa (Adsara Thambid Orava Polo )

Tender coconut is a rich source of nutrients particularly high in calories, saturated fat, and fibre. Not only that it also contains a variety of minerals, including manganese, copper, selenium, phosphorus, potassium, and iron.

Due to the high content of fibre, it may help in weight management, maintain the general health of heart and brain and also boost up the immunity andfacilitateproper digestion.

Ingredients
  • 1 cup red rice

  • 3/4 cup tender coconut (roughly chopped)

  • 2 tbsp cooked red rice (optional)

  • Black salt to taste

  • 1 tbsp cumin (jeera)

  • Water to soak and grind

Method
  • You have to wash and soak red rice for 5– 6 hours. Drain water and grind the soaked red rice, tender coconut and cooked red rice into a smooth batter.
  • Red rice batter should be of pouring consistency (bit watery) If the batter appears to be thick, then you may adjust with water. You may add salt and cumin to the red rice batter and mix well.
  • Heat pan/griddle. Pour a ladle full of batter and spread the batter in a circular pattern.
  • Cover the pan and cook on a medium flame for 30 seconds or 2-3 minutes on sim. You may flip over and cook the other side for a minute.
  • This dosa may taste good with daal.

Notes

  • Make sure the dosa batter is NOT/ALLOWED to be fermented.
  • Adding cooked red rice may make the batter soft
  • This dosa actually tastes good when its brown and soft rather than crispy and golden brown. The dosa is brown due to red rice.
