Chickpea Gaucomole

This is an awesome and filling dip to have in your fridge for when the urge to munch arises.

Ingredients
  • 1 cup boiled chickpeas
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, crushed
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 4 onions, thinly sliced
  • 1 tbsp chopped green chillies
  • 1 tbsp seed butter
  • salt to taste
  • 2 tbsp coriander (optional)
Method
  • Place the cooked chickpeas, draining most of the water, in a food processor or blender. (Keep the drained water aside for liquefying if required)
  • Add the lemon juice and garlic. Pulse briefly, until the chickpeas are slightly chopped.
  • Add the onion and pulse again until the mixture is chunky.
  • Place the mixture in a bowl and add the remaining ingredients. Mix well. Cover and chill before serving.
