Cucumber is a water-rich vegetable, known for its hydrating properties. It can be easily added to one’s diet in different variations! Mint is a refreshing herb that aids digestion. This recipe is easy to make and is sure to charm your taste buds!

Ingredients

  • Cashews - 2 tsp (soaked)
  • Cucumber - 1 (medium-sized)
  • Mint Leaves - 12
  • Garlic Cloves- 3-4
  • Cumin seeds - ½ tsp (roasted)
  • Lemon Juice - 1 tsp

Method

  • Soak cashews for about 4-5 hours.
  • Put all the ingredients in a blender.
  • Blend to get a smooth and creamy consistency.
  • The cucumber mint dip is ready to be served.

     

Eating Guide:

  • Food Group: Vegetable and nuts
  • Nuts are a natural source of good fats. Hence a must add to your dietary intake.
  • Can be served as an accompaniment along with cooked meals/snacks
