Drumstick is known to have many health benefits, but it is a little difficult to make fussy eaters chew on them, many wouldn’t know how to handle it. It does get messy sometimes. Here’s a flavourful drumstick puree soup that extracts the goodness of the vegetable.
Drumstick: 3 Sticks (approx: 150 gms)
Tomatoes: 2 nos
Garlic: 3 cloves
Curry leaves: 2 sprigs
Turmeric: ¼ tsp
Rock salt: to taste
Whole black pepper: ½ tsp
Coriander leaves: for garnish
Water: 2 cups
Cut drumsticks into 1 inch bits.
In a pot place all ingredients other than salt with a cup of water. Cover and simmer for about 10 minutes.
Check that the drumsticks and tomatoes are well cooked.
Separate the drumsticks to a container and transfer the rest of the contents to a blender.
Mash the cooked drumsticks with hands. Add water to the pulp and mash to separate the pulp from the sticks and fiber.
Add more water to the pulp and mash and squeeze for any residual pulp. Totally using around 1.5 cups of water.
Blend the drumstick pulp with the contents in the blender.
Pass it through a soup strainer.
Add salt to taste and simmer to get a warm soup.
Serve garnished with coriander leaves.
