Kuttu or buckwheat is a popular ingredient used during fasting days. Kuttu ki roti, parantha or poori is commonly made in many households. Here is a recipe to add variation to your list of kuttu recipes. Kuttu Dosa or Buckwheat Crepes is an instant dosa made using kuttu ka atta (buckwheat flour), spinach and sama ke chawal (another fasting ingredient). This dosa is served along with aloo ki sabzi and dahi for Navratri.

Fasting or not fasting this a simple recipe you can make to introduce more variety of plant-based meals for your family.

Ingredients

  • Buckwheat Flour (Kuttu ka Atta): 1 cup
  • Sama keChawal - 1/2 cup
  • Spinach - 1/4 cup
  • Peanut curd - 1/2 cup
  • Water - 1/4 Cup
  • Rock Salt - as per taste
  • Cold-pressed oil – very little, just for greasing (optional)

Method

  1. Wash the spinach leaves thoroughly and grind together with kuttu ka atta and sama ke chawal.
  2. Add peanut curd, water, salt and pulse to form a smooth batter (batter should be slightly thick and not runny). Allow to rest for 10 min.
  3. Heat a tawa and grease it using minimal cold-pressed oil. Pour about 2 ladle of batter and spread to form the shape of crepe. (you can choose to skip the oil altogether by greasing the tawa with an onion half, before spreading the batter. Just ensure that the tawa should be hot enough)
  4. Cover and cook for on low flame for about 2 minutes.
  5. Lightly, flip the dosa to another side and cook for another 2 minutes (you may choose to cook more or less as per preference - for crispy brown, you may cook for another minute).
  6. Your kuttu dosa is ready. Serve hot with rassewalle aloo, peanut curd and chutney of choice.

  • Food Group : Millets
  • Millets are gluten-free, rich in fibre and high on nutritional value. They are a good option to add variety to your meals or when you want to go grain free.
  • Works well as a complete meal. Great to go grain-free as grains are complex and difficult to digest.
