
Gluten-free instant masala rice rawa idly
This is an instant masala idly made with rice rawa and hence this is also gluten-free. The masala for the idly is also made oil-free in this recipe. Usually, rawa idly is made with wheat or sooji rawa and uses dairy curd. This is my mother's recipe and since I learnt this few yrs back, I have not bought MTR or any instant mix. I have used a plant-based curd made with peanuts.

Nippattu is a spicy deep-fried snack from Karnataka which is a perfect tea time snack. it is typically prepared during festival seasons like, deepavali, ganesh chaturthi and even krishna janmashtami. This is made with rice flour. I have used an autolysed rice flour dough to mimic the exact taste of the fried crackers. It's actually better than its deep-fried counterpart because this remains crispy even after a day whereas the fried ones become soft.

Rice Flour Roti (using steamed dough) - gluten-free! Oil-free!
This is a recipe for the perfect gluten-free rice roti and can be enjoyed in place of wheat roti. This is soft and puffs up like a phulka. The specialty of this method is cooking the flour in steam (known as autolysis method) in a cooker which makes it become elastic and wheat-like without the presence of gluten. This is also called ukkurisiro akki rotti in Karnataka. Note: This is NOT the same as rice rotti ( Akki rotti ) which is called tatto akki rotti.
