Kerala Spiced Buttermilk - no-dairy chaas!
Heavy Kerala meals are always washed down with a buttermilk recipe, (known as sambharam) which is a lot like the north Indian chaas. The recipe uses a lot of water to dilute the curd and therefore keeps it light and hence can be consumed often during the day. Hydrating is the key to keep cool during summers. This peanut curd recipe deals with something most people attempting to go off dairyare struggling to give up or replace - curd. The best part about dairy alternatives for curd is that you can make curd out of so many different raw materials and each has its own flavour and taste that can be adapted to savoury and sweet needs. When you are starting off, always make them in small quantities because most often than not, they are not going to set as you want the first time. If you are using green chillies, wash the entire green chilli and carefully pluck out the stem. Do not wash the stem again. Store a small portion of this curd to set the subsequent curds as you would do with dairy milk. You can also freeze a portion to use it later.

I heard from a dear friend that she makes curd from muskmelon seeds and tasted very close to the dairy curd we all are so accustomed to. This version of curd is soy free, nut free and is very neutral in flavor. Peanut Milk - easy replacement for dairy!
Wash and soak the peanuts for 2 hours in water. This should yield about 3/4 – 1 cup soaked peanuts. Pour out the water and rinse. Put peanuts in a blender and blend till you get a smooth paste adding a little water only if necessary. The less water you add, the smoother the paste will be (this can be done in the same way ulundu is done for dosai paste). Then add 3 cups water to the paste and bring to boil, allowing it to boil up 2 – 3 times. This will yield a fluid, a little thicker than cow's milk. If you like smoother milk and curd, sieve the mixture. (It is also possible to make the curds without boiling the milk at all. Just take the raw milk, and heat to body temperature. Rice Milk - easy alternative to animal-based milk!
Boil the water, add rice and vanilla bean or vanilla extract. Cook till rice is soft. Let cool, remove vanilla bean (if using) and put mixture into blender or food processor. Blend until very smooth. Let stand for at least 30 minutes, and then pour the liquid on top into another container being careful not to let the sediments in or strain it. Refrigerate. It can be kept for at least 48 hours. Serve cold.
Peanut and Rice Milk Curd - simple dairy substitute!
Put peanuts in a blender and blend till you get a smooth paste adding, a little water at a time. Similarly, make rice milk separately. Stir the peanut milk and boil on low heat. Once it starts to thicken, start adding the rice milk slowly while stirring to prevent clumping. Let the milk fully boil and thicken. Cool to body temperature. Set the yoghurt using the chosen starter the first time you make it, and keep some as a starter for the next batch. The starter can also be stored in the freezer. Note- If you want a thick-set curd then use 6 cups of water for making the milk or if you prefer a bit runny curd, use 8 cups of water. Tender Coconut Chaas (Buttermilk)

Raita With A Difference
Steam the grated bottle gourd for 3 minutes. Mix together the peanut curd, steamed gourd, chopped onions and grated coconut. The consistency should be like a thick batter but easy flowing. If it is too thick, add 1- 2 tsp of water. Heat a pan and roast the mustard seeds. When the seeds splutter, add ginger and green chilli and ‘fry' for 1 minute. Then add the curry leaves and coriander leaves. Stir quickly and remove from the fire. Add this to the curd – gourd mixture.
